Another gem from the cookbook “Falastin”. All recipes in the are written with much thought and you will fall in love with the spices and the food.

This is a wonderfully and carefully balanced flavor able chicken dish and for me a great alternative to tandoori chicken.

The real star of the dish is the za’atar dressing: Bright, earthy, herby, and toasty🌟. This seasoning has become my new favorite spice, it makes plain stuff taste exciting and special. I’ll make it at home one of these days- it contains equal measure of each -fresh chopped oregano, ground sumac, ground cumin and sesame seeds and kosher salt and fresh ground pepper to taste.

▶️For Marination:
1 lb Whole Chicken cut into pieces
3 onions, halved and then cut into three.
2 tbsp Za’atar Spice
2 tsp Sumac
1 Lemon cut into slices
2 tbsp Lemon juice
6-8 garlic cloves
1/4 cup olive oil
3/4 cup chicken stock
Salt and Pepper

Marinate chicken pieces with all the ingredients above, combine well and let marinate sit in the fridge for at least 2 hours or overnight.

Preheat oven to 425 deg F.
Transfer chicken to a rimmed baking dish with a lining and bake for 45 minutes.

1/4 cup toasted Almond Slices
1/4 cup Parsley
2 tbsp olive oil
2 tbsp za’atar
1/4 cup olive oil

Spoon the oil and garnish chicken with parsley, almond slices and more za’atar mix. Serve warm♨️ with pita- homemade recipe coming soon.
