SWEET POTATO IN LIME, TOMATO AND CARDAMOM SAUCE ♨️
Happy Thanksgiving holiday week! This is a season of . Luckily, many sweet potato varieties are easily available in the farmers market close by. Sweet potatoes vary hugely in looks and color. Their skin can be tan, cream, copper or a deep purple-red, but it’s the flesh inside, which ranges from orange to white or bright purple, that highlights the differences in taste and texture.

This wonderful recipe from is a perfect holiday dish and easy to prep. The sweet potatoes are cut and marinated in maple syrup, cardamom and other spices and placed side down on an oven tray lined with baking paper, and roasted for 30 minutes until very soft and with a glazed, caramelized surface. While sweet potatoes are baking, the sauce rich in onion, tomato, lemon juice and garlic is cooked on the side. Once everything cooks, sweet potato are placed inside the sauce, cooked for a few minutes and drizzled with garlic cilantro green chutney.
It’s such a genius combination and works very well as a main or side dish.
