STUFFED EGGPLANT 🍆 भरली वांगी
Though eggplant is relatively delicate, it pulls in the flavor of whatever it’s cooked with, in this case garlic, herbs and spicy masala.🌱🍃🧄
I made this delicious stuffed eggplant Solapur Style recipe, inspired from Chef Anagha at saffrontouch stories. The stuffing and preparation is slightly different from traditional Northern Punjabi style and that got me excited. This recipe also has coconut and peanuts, which makes the dish sumptuous. I used everyday spices as I didn’t have some traditional spices on hand, nonetheless this simple, delicious, aromatic🥥 🍆♨️preparation is definitely a keeper!
Small Purple Eggplants firm, 6-8
1/2 cup Onion (Chopped)
1 medium tomato (Chopped)
1/4 cup Peanuts (Roasted and chopped coarse in blender)
1/2 cup Fresh Coconut (Grated)
1/2 cup Fresh Cilantro (Chopped)
8-10 curry leaves
1-2 Green Chillies ( chopped)
1 inch Ginger (Minced)
5-6 Cloves of Garlic minced
1-2 tsp Red Chilli Powder
1 tsp dry Coriander Powder
Salt to taste
So, I filled the slit eggplants with the onions, tomatoes and stuffing mix first. Then I roasted mustard seeds and hing and seared eggplants in the hot oil at low flame.
Covered them with lid to cook from inside, turned them around a few times and wallah…finger licking delicious and soul warming stuffed eggplants are ready.
