STUFFED AUBERGINES IN RED LENTIL COCONUT CURRY- bring an oomph to those plain old red lentils✨

There is mango pickle, homemade paneer, spinach leaves, eggplant and lentils☺️- this is a delightful one pot dish that includes a variety of mini recipes inside.

Recipe-ish:
Eggplant slices are first baked in the oven, and then stuffed with homemade paneer marinated in mango pickle which is rolled inside spinach and roasted eggplants slices. These are then placed in cooked red lentil curry that is lightly sautéed with onions and mild spices and infused with coconut milk.

  1. Wowowowow, Dear!! This looks absolutely mouthwatering! I like this aubergine curry a lot because it’s super easy to make and it only requires some very simple ingredients. I absolutely love a good red lentil curry recipe because of the texture the lentils lend to the dish. Lentils are also great for spooning with delicious chunks of naan bread, so it’s difficult to say no to them 🤤
