LEMON πŸ‹SANDESH BARFI ~ CHEESECAKE TRIANGLES I wanted to do a for the Indian and Bengali sweet made with fresh paneer is probably the closest to the Western Cheesecake.
Many Indian desserts are fried foods made with sugar, milk or condensed milk and ingredients and types of dessert vary by region. In the eastern part of India, for example, most desserts are based on milk products. Many are flavored with almonds and pistachios, spiced with aromatic spices like cardamon, cloves and nutmeg and decorated with nuts like almonds, cashew, pistachios etc.

INGREDIENTS
1/2 cup butter, softened
1 cup ricotta cheese
1/2 cup sugar
2 eggs
1 tsp ground cardamom
1 1/2 tsp lemon zest
1/4 cup fresh lemon juice
1 cup all purpose flour sieved with 1 tsp baking powder
3/4 cup almond flour

For the glaze-
1/4 cup fresh lemon juice
1/2 cup sugar
1/2 cup sliced almonds or pumpkin seeds

STEPS
1. Pre-heat the oven to 325Β°F.
2. Place the butter, ricotta cheese, sugar, eggs in a food processor. Add eggs, the ground cardamom, lemon zest, lemon juice and the flours with the baking powder.
3. Make sure everything is well mixed.
4. Pour into the greased pan and bake for about 25 – 30 minutes, until the sides looks slightly golden.
5. Cool on a rack for at least 30 minutes and invert carefully.
6. Make the glaze by adding the lemon juice, 1/2 cup water and sugar and reduce this down for 10-15 minutes at low flame until sticky. Pour this over the lemon barfi.
7. Scatter with the almonds and pumpkin seeds or any other nuts.
8. Let it cool for at least 1 or 2 hours and cut into squares and serve.
