HERBED ORZO SALAD
I enjoy creating hearty salads ๐Ÿƒ๐ŸŒฑ๐Ÿฅ’that are fresh and easy to put together. The delicious mixture of crunchy vegetables and masala chickpeas pair well with the creamy paneer and orzo to make the ultimate easy summer salad.

This cool week day salad is perfect for the hot evenings.

INGREDIENTS
6oz dry gluten free or regular orzo pasta, (cook per package instructions)
1/2 cup red bell pepper, sliced
1-1/2 cups spinach chopped
1/2 cup cucumber, sliced
1/4 cup onions, sliced
1/2 cup crumbled fresh paneer
1/4 cup chopped basil, chopped
2 tbsp roasted masala chana

For the Lemon Dressing:
1/4 cup lemon juice
salt and pepper, lots
1 clove garlic minced
1/2 cup extra virgin olive oil
.
STEPS:
1. Mix the ingredients of lemon dressing, whisk for a few minutes and keep aside.
2. Toss orzo with spinach, red bell pepper, onion, basil, cucumber, and enough dressing to coat. Season the salad, to taste, with salt and pepper, and serve at room temperature.
