I love beetroots, because it tastes of the earth and its color makes total sense at this time of the year. This beautiful whole beetroot recipe is a lovely side dish or a tasty chaat to any festive meal.

Barbecue whole beetroots till they soften. Prepare a butter lime sauce with cilantro, markut lime leaves, garlic and butter- creat and drizzle the sauce all over and in between red petals. Bake again and place on a bed of yogurt and creme fraiche on a large plate. Drizzle over the remaining lime leaf butter sauce and finish with a generous sprinkle of flaked sea salt and chat masala.☺️
