EGGLESS APPLE WALNUT WALDORF CAKE🥮

My friend Konki’s mom gave me this recipe many years ago when I had visited her in Bangalore and we were looking through some cookbook. Chock-full of crunchy walnuts and moist dried fruits, it was very appealing. I am being inventive with that fantastic recipe and have created an eggless version by adding extra oil, cream and milk. I am not sure why it is called “Waldorf” as the name now is mostly associated with Waldorf Astoria’s famous red velvet cake💁🏻♀️.
This is a lighter cake recipe and I hope you will try and enjoy!
INGREDIENTS AND STEPS:
1/3 cup Cream
1/2 cup Oil
Whisk for a few minutes till it forms an emulsion
▶️Mix Dry Ingredients
3/4 cup All Purpose Flour
1/4 cup Almond Flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Cinnamon Powder
1/4 tsp Nutmeg
1/4 tsp Salt
Mix together and break any flour lumps
▶️Prep Sugar Mixture
1/2 cup Milk
1/2 cup Water
3/4 cup Brown Sugar
Combine them in a bowl and mix till all sugar dissolves
▶️Prep Apple Mixture
1 medium Apple chopped
1 tbsp Butter
4 tbsp Brown Sugar
1/2 cup Tutti Fruti
1/2 cup Walnuts
1/2 tsp Vanilla Extract
In a pan over medium heat melt butter and stir apples, walnuts, tutti fruti till walnuts are slightly roasted and apples have softened. Add sugar and keep stirring and in the end add vanilla
2 tbsp cold Butter
2 tbsp walnut coarse chopped
2 tbsp Flour
2 tbsp Brown Sugar
Combine it all loosely till a shaggy mixture is formed
Mix sugar, apple mixture, mayo and dry flour mixture and mix it all well.
Pour batter into a greased pan. Spread crumble on top.
Bake in a preheated oven at 325 deg F for ~40 mins.
▶️Cool on a rack
Do a toothpick test to make sure cake is cooked completely.
Cool on a rack for at least 20 mins. Enjoy!
