CURRIED SCOTCHED EGGS♨️ ~Turkey Balls with Egg Inside🥘 As is true of many curries, this one is a labor of love. This is Mughlai cuisine inspired recipe infused with fresh herbs and Persian spices. It may sound complicated, but it is fairly easy to prepare.
This recipe takes regular kofta meatballs to another level as it consists of hard boiled eggs encased in the turkey meat covering that is infused with spices and herbs. I was inspired by tibor_cook post to try this delightful curry, check out his profile for amazing curry combinations.

INGREDIENTS: 4X
Kofta:
1 pound ground Turkey
Salt
1 tsp Baharat spices- a spice mix with cumin, cardamom, cinnamon, nutmeg and turmeric.
1 tbsp Za’atar spice
1 tsp red chili powder
4 eggs nelliesfreerange
1/3 cup bread crumbs
1/2 cup chopped herbs

▶️Mix all the ingredients, cover it and keep in the refrigerator for 1 hour.
4 Hard Boiled Eggs

Gravy:
▶️Spices to roast-
1 bay leaf
1 tsp cumin seeds
1 tsp nigella seeds
2-3 cloves
▶️Sauce with-
2 tbsp ginger garlic paste
2 med onions fried, puréed
2 medium tomatoes – puréed
1 tbsp tomato paste
▶️Add spices-
1 tsp turmeric powder
1 tbsp coriander powder
1 tsp red chili powder
1 tsp Salt
1 tsp sugar
1 tbsp chopped herbs

RECIPE:
▶️Koftas:
Wrap the 4 hard boiled eggs with kofta mix making sure eggs are encased completely. Heat the mustard oil in a pan, and when it’s medium ho, fry the kofta balls until light brown. Keep aside.

▶️Gravy:
In a pan over medium flame, make a curry by roasting spices first and then adding ginger garlic paste, fried onion paste and tomato puree’ to make a sauce. Cut egg koftas in half, tip into the sauce, cover and cook for 10-15 minutes. This insures that koftas are completely cooked from within and this also thickens the gravy. Enjoy!
