BLACK CHANA~Black chickpea curry~ काला चना
Kala chana is the healthier chickpea variety since it is rich in fiber and protein and tastes delicious. This is a family curry recipe and my mom would make these chickpeas always in ▶️ a cast iron wok. It gives a unique and flavourful taste to the curry and in addition the freshly ground spices enhance the flavor.

INGREDIENTS
▶️FOR INSTAPOT:
1 cup black chickpeas
1 stick cinnamon, 4 cloves
3 cup water
Instpot setting: HP 50 mins

▶️FRESH KALA CHANA MASALA:
½ tsp cumin
1 tsp coriander seeds
¼ tsp shahi jeera
¼ tsp pepper
3 cloves
2 pods cardamom
3 dried Kashmiri red chilli
Dry roast all for 2-3 minute, cool and fine grind. Add-
¼ tsp turmeric
¼ tsp aamchur
¼ tsp garam masala
pinch asafoetida

▶️FOR CURRY:
mustard oil
1 bay leaf
1 onion, finely chopped
1 tsp ginger garlic paste
1 chilli, slit
2 tomato, puréed
salt

FOR GARNISH:
Fresh Avocado slices
Cilantro leaves
Green onions chopped

STEPS:
1. In a large wok heat oil and saute 1 bay leaf, add chopped onion, ginger garlic paste and chilli. Sauté until the onions turn translucent.
2. Add fresh masala and saute on low flame until the spice powder turn aromatic.
3. Add tomato purée and saute well and cook until the oil is separated.
4. Add cooked black chana, salt, 1-2 cups water and cover and simmer for 10 minutes.
5. Before serving, add garnish of avocado slices, green onions and cilantro.
