ALMOND HAZELNUT COOKIES
▶️California and the West are suffering. It’s being caused by the thick haze hovering over us due to the thousand of acres of wildfires🔥. Air quality is so bad that it’s difficult to even go in the backyard due to smog.
Hoping this ends soon and praying for everyone’s safety including the 28,000+ firefighters who are battling these fires 🙏🏻

ALMOND HAZELNUT COOKIES
This is what I made today—delightfully light, nutty cookies packed with flavorful chopped hazelnuts and tutti fruti.
*️⃣They are naturally grain-free and hence gluten-free.

INGREDIENTS 5-6 cookies
(2X for 10-12 cookies)

1 Month Vegan Challenge

1 cup (112 g) almond flour
3 tbsp brown or coconut palm sugar
1/2 tsp baking powder
1/8 tsp salt
2 tbsp water
2 tbsp chopped Hazelnuts
2 tbsp tutti fruti pieces

STEPS
1. Preheat oven to 350 deg F
2. Mix all ingredients till cookie dough is moist.
3. Scoop 1 tbsp balls onto a cookie sheet and slightly press into round flat shape.
4. Press the cookies and flatten them or press a mold on them.
5. Place sheet in the oven for at least 18 mins till cookies are lightly golden on top
6. Remove from oven and cool completely on a cooking rack for at least 30 mins.
